Well, the soup turned out to be just right for this evening! I also took pictures of the bread in various stages of being made and updated the Homemade Bread page. Here’s a picture of the finished product:

Groovy Morning

Wow… I feel great this morning! The bread is on its first rise on the island in the kitchen, the dogs are out enjoying the morning, and the guineas have been fed. There is magic to the morning when you share it with goofy birds and happy Golden Retrievers! I have started the meal planning for this evening and thought I would include the recipe in my blog entry:

Cream of Tomato Soup with Pesto Swirl

  • ¼ cup olive oil
  • 1 sweet onion, minced
  • 1 grated carrot
  • 1 stalk of celery, minced
  • 1 clove garlic, minced
  • ¼ cup all-purpose flour
  • 6 tomatoes (peeled, seeded, & chopped)
  • 2 Tbsp chopped fresh basil
  • ¼ cup tomato paste
  • 1 tsp sugar
  • 3 cups chicken stock
  • 1 cup evaporated milk
  • 1 cup sharp cheddar cheese
  • Salt and pepper
  • 6 Tbsp pesto

Heat the olive oil in a large saucepan over medium heat When the oil is hot, add onion and cook for about 3 minutes. Add carrots and celery and cook about 5-6 minutes longer then add the garlic. Reduce the heat to low and sprinkle flour into the saucepan, stirring constantly. Once thickened, add the tomatoes, tomato paste, sugar, basil, and chicken stock. Simmer over med-high heat with the lid partially covering, stirring every so often until the tomatoes have softened and look like chunky spaghetti sauce. Turn off the heat and move to a cool burner. Using an stick blender, coursely puree the soup (make sure you leave some texture). Stir in the milk and gently reheat. Do NOT Boil. Add cheddar cheese to the soup and melt slowly. Add salt and freshly ground black pepper (to taste).

Pour soup into bowls and swirl pesto into each bowl. Serve with homemade honey-wheat bread and a fresh garden salad.
