Homemade Sweet Potato Chips

Nothing says welcome home like an old fashioned hamburger with homemade sweet potato chips. Salty/sweet flavor combinations thrill my senses and, boy, are they ever easy to make.
Thanks to recent travels, I got to jog my homemade potato chip memory at the OK Cafe in Atlanta, GA where these babies are served warm on demand with blue cheese dressing for dip. As I scarfed down my share, I thought: I need to remember to make these when I get home. And guess what? I remembered.
I also remembered to take pictures so you can make them, too, without ever having to battle traffic and crowds — at your very own kitchen table. Am I a pal, or what?
All you need are two sweet potatoes, some sea salt (or regular table salt — up to you), and a few cups of oil. Read more

Josh, his dog, his gun, my knitting basket, oil lamps (in case of power outages which were very common when we lived in Washington — we’ve acquired them at yard sales, flea markets, and antique malls), and a copy of Grit magazine on the end table. The picture of simple living bliss. As are these:
More of the knitting basket… that thing is just a camera hog. Yes, and some mood lighting: candles so that people will think we actually remember to light them.
The picture above is pretty much the same thing as finding “Josh was here” carved in a school desk.
We never tackle the impossible… like getting ducks out of a koi pond.
Wishing everyone a safe and fun weekend! See you Monday!
