Tears on Your Pillow Pie

Are you a pie fan? I adore pie and much prefer it to cake. Cake is so often dry and boring — but pie is never dull and it’s got WAY more of the good stuff. After all, if you are going to be bad and indulge (Now, why is that a bad thing again??), then why not go for the best? This pie won’t let you down. It’s delicate texture and yummy goodness will keep you smiling all day long! Special thanks to my Aunt Nancy for giving me her mother’s recipe!

Gather together the following ingredients:

1/3 cup salted butter, melted

1 1/2 cups brown sugar, packed

2 room-temp eggs (Free range — of course!)

1 Tbsp all-purpose unbleached flour or graham flour

1/2 cup evaporated milk

1 9-inch pie crust or four mini pie shells

Preheat oven to 350 degrees Fahrenheit.

Beat butter, sugar, eggs, flour, and milk until well-blended. Pour into unbaked pie shells.

Bake 15 minutes or until the crust is golden brown. Do not open the oven door! Turn off the oven and set the timer for 45 minutes. Check the pie. If it has not set up then let it stay in the oven (remember — NO HEAT) another fifteen minutes. Serve right away or chilled.

So easy! So good!!!! Now just pick which hip you plan on this going to and dig in!
