Nothing in the kitchen frightens our guests like a pressure cooker. In fact, a hissing pressure cooker could be set up at haunted houses in place of those masked chainsaw-carrying guys and people would be every bit as terrified. Finding authentic Hawaiian restaurants in Hawaii is frustrating work. All the usual methods of finding good eats simply don’t work around here. When asked where the best hole-in-the-wall mom-and-pop cafes and bistros are hiding, the locals will usually direct you to the nearest sub shop or Mexican food eatery. Oh, and I really wish this was a joke. I did not fly all the way to Hawaii for Mexican food, y’all. But then, heaven fell from the sky (or rather the sea) and found its way to my plate. This I tell you, brother, you can’t have one without the other. This hearty dish tops the list of favorites in our house. We say “Bah!” on the use of egg noodles with this dish and reach straight for the spaetzle (or spätzle or knöpfle or spätzli or knöpfli… depending on where you are from).
