Hat Trick Peanut Butter Cookies

These cookies may be the easiest thing to manufacture since the invention of mining for nose gold.  I mean it.  Look carefully at those darling sweet treats which require only three ingredients and just try to talk yourself out of making them.  It can’t be done.  Well, unless you are allergic to peanut butter or eggs or happiness.

To completely rip off and also poorly quote the lyrical genius of Eddie Money:  I’ve got three tickets to paradise.

Ingredients/tickets:

  • 1 cup peanut butter (crunchy, smooth, natural, whatever you got)
  • 1 cup sugar
  • 1 egg

Mix all the ingredients together.  Now form the dough into 1″ balls, place on a lined cookie sheet, and press with a fork (you may want to dip the fork into some sugar first).  Bake in a 350 degree oven for 10-12 minutes.  Let cool.  Or don’t.  Either way, enjoy them!

I have jazzed them up with a handful or two of chocolate chips, toffee bits, chopped pecans or macadamia nuts, M & Ms, and/or toasted coconut with great results.  While these are certainly no substitute for your grandma’s super-secret recipe cookies… they are a very handy super-secret weapon.

If you are looking at this post and thinking that you must be on the wrong website (Where is the homemade cheese and made-from-scratch _________?)  Has this chick suffered a complete identity crisis and decided to become Sandra Lee of the Food Network?.  Fear not.   I am still the gal with bread rising on the counter and “make soap” on her To Do list.   I also know what it’s like to try and juggle the needs of four children and a husband.  Cookies help.

    First, that is the second reference to Eddie Money’s three tickets to paradise I’ve heard today… (ok, well maybe it was last night, i’m sick and time is a concept i lost a week ago)

    Second, those look terribly terribly yummy…

    and Third, can it really be done with no flour?
