Hat Trick Peanut Butter Cookies

These cookies may be the easiest thing to manufacture since the invention of mining for nose gold. I mean it. Look carefully at those darling sweet treats which require only three ingredients and just try to talk yourself out of making them. It can’t be done. Well, unless you are allergic to peanut butter or eggs or happiness.
To completely rip off and also poorly quote the lyrical genius of Eddie Money: I’ve got three tickets to paradise.
- 1 cup peanut butter (crunchy, smooth, natural, whatever you got)
- 1 cup sugar
- 1 egg
Mix all the ingredients together. Now form the dough into 1″ balls, place on a lined cookie sheet, and press with a fork (you may want to dip the fork into some sugar first). Bake in a 350 degree oven for 10-12 minutes. Let cool. Or don’t. Either way, enjoy them!
I have jazzed them up with a handful or two of chocolate chips, toffee bits, chopped pecans or macadamia nuts, M & Ms, and/or toasted coconut with great results. While these are certainly no substitute for your grandma’s super-secret recipe cookies… they are a very handy super-secret weapon.
