Rainbow Bread

When we host playdates, the children always ask if we can make rainbow bread and I always agree. Why? Because it is marvelously easy to make, fun for the children, and the results are delicious. If you’ve never made it before, here’s your chance!

You will need:

6 cups of flour (bread flour or all-purpose), plus more for kneading
1 1/2 Tbsp rapid-rise or instant yeast
1 1/2 tsp ground sea salt
1/4 cup oil (vegetable/olive oil/safflower/coconut)
2 cups warm water
2/3 cup honey or agave nectar
food coloring

1.) In a large bowl, stir the dry ingredients together and then make a “well” in the the center.
2.) Add the wet ingredients (oil, water, and honey) and then stir with a wooden spoon until a sticky dough forms.
3.) Dust the counter with flour, turn the dough out onto the counter, and cover it with the large bowl.  Allow the dough to rest for five or ten minutes while you gather the children and supervise handwashing.
4.) Divide the dough into four or more bowls and begin adding food coloring to each bowl. Older children really love adding the drops of color to the dough (and spilling it on your counters).
5.) Knead the food coloring into each ball of dough until you have dough balls for each color. This will likely require additional drops of food coloring. The dough will be swirled with color.
6.) Preheat your oven to 350 degrees Fahrenheit. Dust the counter and let the children shape the dough. I suggest giving them cookie cutters, too.  Usually, the dough has risen by the time all of the children finish creating rainbow bread twists, braids, and shapes but if not, they should rise until nearly doubled in size.
7.) Place the dough shapes on a lined cookie sheet and bake for 15-20 minutes on the center rack. Allow the bread to cool on wire racks and then have a picnic with the children. Sometimes, I set the table with various spreads (coconut butter, peanut butter, macadamia nut butter, etc.) for the kids to sample or I place a large tablecloth/quilt in the yard with bowls of fruit & sliced cheese for the children to eat with their rainbow bread. The bread is sweet, colorful, and soft. It makes wonderful sandwiches, too!

I like making the spreads in my Vitamix or food processor and then putting them in cute little glasses for the kids. See?
