Baking bread is one of my favorite things to do with my three year old. He loves grinding wheat, stirring the dough, and kneading the bread. He even enjoys the clean up! During our recent trip to Alaska, Caleb made two scrumptious loaves of bread. Here’s the recipe and unfathomable cuteness!
6 cups unbleached flour
2 Tbsp honey or agave nectar
1 1/2 Tbsp instant yeast
4 teaspoons ground sea salt
1/3 cup wheat berries (to be ground)
2 2/3 cup warm water
4 Tbsp unsweetened cocoa powder (more, if you would like)
Toddler-sized-handful each: pecans and shelled sunflower seeds
4 Tbsp vegetable oil (we used avocado oil but coconut oil or olive oil would work just fine)
Place flour, salt, yeast, honey, cocoa powder, sunflower seeds, and oil in a large bowl. Grind the pecans and wheat berries in a grain mill or powerful blender (food processors and mortar & pestle work, too) and add them to the bowl. Pour in the water and stir with a wooden spoon until fully incorporated. Allow to rest for at least ten minutes.
Turn the dough out onto a floured surface and knead until the dough may be shaped with ease.
Form the dough into two loaves and place on a greased pan.
Allow the loaves to rise until nearly doubled and then bake them in a 400°F oven for 30-40 minutes (or until they make a hollow sound when tapped). For extra crunchy loaves, spray the oven walls with water before you place the loaves in the oven to bake.
This bread was yummy! We loved it with butter but it was even better with cream cheese, sliced avocado, and homemade caviar.
